Olive Relish

A flavorful relish that is best served with grilled steaks.

1 (6 1/2 ounce) jar marinated artichoke hearts
2 medium tomatoes, seeded and chopped
1 cup pitted ripe olives, halved lengthwise
2 green onions, thinly sliced
1 tablespoon red wine vinegar
1 clove garlic, minced
1/8 teaspoon ground black pepper


Drain artichokes, reserving marinade. Coarsely chop artichokes. In a medium bowl, combine all the ingredients, including the artichoke marinade; mixing well. Cover and chill in the refrigerator for at least 2 hours or up to 4 hours.
