Yam and Pineapple Casserole

Jam-packed with yams, marshmallows and other delicious treats, this casserole will be a success whether served for dinner or dessert!

6 large yams
2 (8 ounce) cans crushed pineapple, with juice
1/2 pound golden currants
1/2 teaspoon ground cinnamon
1 2/3 cups miniature marshmallows


Cook yams in a large pot of salted water until tender, about 20 to 30 minutes. Dice the yams and place into a 13 x 9-inch baking dish.

Preheat oven to 350°F (177°C).

Stir pineapple, currants and cinnamon into the casserole dish. Sprinkle marshmallows over the casserole.

Bake in a preheated for 35 minutes.
