Baked Eggplant Fries

A fun way to enjoy eggplant that's a healthier option to regular French fries. Try them as a side or snack!


4 servings


1 cup panko crispy bread crumbs (e.g. Progresso®)
1 teaspoon crushed red pepper flakes
salt and pepper
1 egg
1 medium eggplant, peeled, cut into thin strips


Preheat oven to 450°F (232°C). Line baking sheet with cooking parchment paper or silicone baking mat.

In shallow bowl, mix bread crumbs, pepper flakes, salt and pepper. In another shallow bowl, beat egg with fork or whisk. Dip eggplant strips into egg, coating all sides; shake off excess. Roll in bread crumb mixture until coated. Place on baking sheet.

Bake about 20 minutes, turning once, or until coating is crisp and lightly golden.

Additional Information

Serve the fries with warmed marinara sauce for dipping.

If you can't find panko bread crumbs, you can substitute plain bread crumbs.
