Turnip Casserole

No holiday meal is complete without this Finnish dish. It makes an excellent complement to turkey, beef or ham.

4 medium turnips, peeled and cubed
1 cup water
1 large egg, beaten
1/3 cup granulated (white) sugar
3 tablespoons butter or margarine
1/2 teaspoon salt
1/4 teaspoon ground cinnamon


Place turnips in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15 minutes or until tender and drain.

Preheat oven to 350°F (177°C). Grease a 1-quart baking dish with cooking spray or butter.

Transfer turnips to a bowl and mash. Add the egg, sugar, butter and salt; mix well. Transfer to prepared baking dish; sprinkle with cinnamon. Cover.

Bake at for 20 to 25 minutes or until a thermometer reads 160°F (71°C) and turnip mixture is heated through.
