Curry Sausage Couscous

Not certain if you like curry? Don't worry. This flavorful blend of couscous and sausage has just the right touch of curry.


4 servings


1 pound bulk pork sausage
1 medium onion, chopped (1/2 cup)
1/4 cup pistachio nuts, chopped
1/2 teaspoon curry powder
1 garlic clove, finely chopped
2 1/4 cups water
2 tablespoons butter or margarine
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1 1/2 cups uncooked couscous


Cook pork, onion, nuts, curry powder and garlic in 10-inch skillet over medium heat, stirring occasionally, until pork is no longer pink; drain.

Stir in water, butter, parsley and salt; heat to boiling. Stir in couscous; remove from heat. Cover and let stand about 5 minutes or until liquid is absorbed. Fluff with fork.

Additional Information

Couscous is made from semolina. It's a delightful change from pasta, rice or noodles. You can often find it near the rice mixes in your grocery store.

Make this a colorful one-dish meal by stirring in 2 cups cooked frozen sweet peas just before serving.
