Curried Apricot Couscous

This dish is so quick, colorful and easy.


5 servings


1/3 cup chopped onion
3 tablespoons butter
1 1/2 cups chicken broth
1 cup chopped dried apricots
1/4 teaspoon curry powder
1 cup uncooked couscous


In a small saucepan, sauté onion in butter. Stir in the broth, apricots and curry powder. Bring to a boil. Stir in couscous.

Cover and remove from the heat; let stand for 5 to 10 minutes or until liquid is absorbed. Fluff with a fork.
