Baked Cauliflower

The cheddar cheese and bread crumb topping makes it a pretty casserole for a holiday dinner. You can easily double the amounts if you're having a larger group.

Yield

4 to 6 servings

Ingredients

1 medium onion, chopped
1 garlic clove, minced
4 tablespoons butter, divided
2 tablespoons olive oil
1 (16 ounce) package frozen cauliflower, thawed
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
1/4 cup dry bread crumbs
1/4 cup shredded cheddar cheese

Directions

Preheat oven to 350°F (177°C.) Grease a 1-quart baking dish with cooking spray.

In a large skillet, saute onion and garlic in 2 tablespoons butter and oil until onion is tender. Add the cauliflower, salt, pepper and nutmeg; saute for 2 minutes. Transfer to prepared baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over cauliflower mixture.

Cover and bake for 15 minutes. Uncover; bake for 10 minutes or until heated through. Sprinkle with cheese; bake 3 to 5 minutes longer or until cheese is melted.
