Scalloped Pineapple Casserole

A sweet and satisfying side dish that disappears quickly each time it is served.

3/4 cup butter, room temperature
1 1/4 cups granulated (white) sugar
3 eggs
1 (20 ounce) can crushed pineapple, well drained
1 1/2 teaspoons lemon juice
4 cups firmly packed cubed white bread (crusts removed)


Preheat oven to 350°F (177°C). Grease a 2-quart baking dish with cooking spray.

In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Stir in the pineapple and lemon juice. Gently fold in bread cubes. Spoon into prepared baking dish.

Bake, uncovered, for 40 to 45 minutes or until top is lightly golden. Serve warm.
