Creamed Spinach Casserole
This recipes comes from an old cookbook received as a wedding gift in 1945. As the family grew up, the children loved all vegetables, but they often requested spinach served this way. Through the years, it has remained a family favorite.

Ingredients
1 (10 ounce) package frozen chopped spinach
5 tablespoons butter, divided
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese
2 eggs, beaten
1/2 cup milk
1/2 cup soft bread crumbs
Directions
Preheat oven to 350°F (177°C). Grease two 8-ounce baking dishes.
In a saucepan, cook spinach in a small amount of water for 2 to 3 minutes; drain thoroughly. Add 4 tablespoons butter, salt, pepper, cheese, eggs and milk.
Spoon into prepared baking dishes. Melt the remaining butter; add crumbs. Sprinkle over spinach mixture.
Bake, uncovered, for 20 to 25 minutes or until almost set.

Additional Information
A shallow 1-quart baking dish can be used instead of two 8-ounce dishes. Bake for 25 to 30 minutes.
