Country Pineapple Casserole

This dish goes perfect with a ham supper and covered-dish meals. It really is delicious.


12 to 16 servings


1/2 cup butter, room temperature
2 cups granulated (white) sugar
8 eggs
2 (20 ounce) cans crushed pineapple, drained
3 tablespoons lemon juice
10 slices day-old white bread, cubed


Preheat oven to 325°F (163°C). Grease a 13 x 9-inch baking dish.

In a large bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in pineapple and lemon juice. Fold in bread cubes. Pour into prepared baking dish.

Bake, uncovered, for 35 to 40 minutes or until a knife inserted near the center comes out clean.
