Comforting Broccoli Casserole

For old-fashioned goodness, there's nothing like a casserole. For this one, nutritious broccoli is dressed up with two kinds of cheese and, golden bread crumbs.

Ingredients

2 eggs, lightly beaten
1 (10.75 ounces) can condensed cream of mushroom soup, undiluted
1 medium onion, chopped
1 cup (4 ounces) shredded cheddar cheese
1 cup (4 ounces) shredded Swiss cheese
1/2 cup mayonnaise
2 tablespoons butter, melted
1 (16 ounce) package frozen broccoli cuts, thawed
1 (10 ounce) package frozen chopped broccoli (about 3 cups), thawed
1/4 cup dry bread crumbs

Directions

Preheat oven to 400°F (204°C). Spray a 1 1/2 quart baking dish with cooking spray.

In a large bowl, combine the first seven ingredients; fold in broccoli. Transfer to prepared baking dish. Sprinkle with bread crumbs.

Cover and bake in the preheated oven for 30 to 35 minutes or a thermometer reads 160°F (71°C).
