Cheesy Chili Casserole

This cheesy Mexican casserole can easily become a meaty main course dish by adding a pound of ground beef.

Ingredients

2 cups (8 ounces) shredded Monterey Jack cheese
2 cups (8 ounces) shredded cheddar cheese
1 (7 ounce) can whole green chilies, rinsed and seeded
2 eggs
2 tablespoons all-purpose flour
1 (12 ounce) can evaporated milk
1 (8 ounce) can tomato sauce or 1 cup fresh salsa, drained, divided

Directions

Preheat oven to 350°F (177°C). Grease an 11 x 7-inch baking dish.

In a large bowl, combine cheeses. Layer cheese and chilies in the prepared backing dish.. Whisk the eggs, flour and milk; pour over cheese mixture.

Bake for 30 minutes. Top with half the tomato sauce or salsa; bake 10 minutes longer or until heated through. Let stand for 5 minutes before serving. Serve with remaining sauce.
