Baked Potato Casserole

A delicious potato dish for when you want something different. Made with red potatoes, bacon, Cheddar cheese, onion, mayonnaise, sour cream and chives.

5 pounds red potatoes, cooked and cubed
1 pound sliced bacon, cooked and crumbled
4 cups cubed Cheddar cheese
4 cups shredded sharp Cheddar cheese
1 large onion, finely chopped
1 cup mayonnaise*
1 cup sour cream
1 tablespoon minced chives
1 teaspoon salt
1/2 teaspoon pepper


Preheat oven to 325°F (163°C). Grease a 4 1/2 quart baking dish.

In a large bowl, combine potatoes and bacon. In another bowl, combine the remaining ingredients; add to potato mixture. Toss gently to coat. Transfer to a greased 4 1/2-quart baking dish.

Bake, uncovered, for 50 to 60 minutes or until bubbly and lightly browned.

Additional Information

Reduced-fat or fat-free mayonnaise may not be substituted for regular mayonnaise in this recipe.
