Mint Simple Syrup

Simple syrup is what bartenders use to sweeten cocktails, by dissolving sugar in water. This syrup is infused with mint leaves and is a key ingredient in Mint Juleps.

about 1 1/2 cups

1/2 cup granulated (white) sugar
1 cup water
1/2 cup fresh mint leaves

In a small saucepan over medium-high heat, bring sugar and water to a boil. Add fresh mint leaves. Reduce heat to maintain a simmer and cook until slightly thickened, about 10 minutes. Transfer syrup to a small metal bowl and let sit until cool, about 10 minutes. Use warm, let cool to room temperature.

Store covered and chilled, up to six months.
