Fresh Blueberry Topping

Yield

about 3 1/2 cups

Ingredients

2 cups unsweetened pineapple juice
3 tablespoons tapioca
2 cups blueberries

Directions

Bring pineapple juice and tapioca to a boil. Cook until clear. Stir in blueberries (mashed or whole) and reheat. Serve over pancakes or waffles.
