Crowd Pleasing Potato Salad

Everyone loves potato salad but not everyone can enjoy it. This recipe allows everyone, no matter what their diet, to enjoy potato salad.


16 to 20 servings


1 gallon potatoes (about 16 large), cooked, peeled and sliced
10 hard-cooked eggs
1 cup chopped onion
2 cups Miracle Whip
1 cup half-and-half cream
1/3 cup vinegar
1/3 cup granulated (white) sugar
3 tablespoons prepared mustard
1/2 teaspoon salt


Place potatoes in a large salad bowl. Separate eggs. Chop whites and add to potatoes with onion. Toss gently. In another bowl, mash yolks with Miracle Whip, cream, vinegar, sugar, mustard and salt. Pour over potatoes and stir to coat. Cover and chill.
