Macadamia Nut Pie

This pie made with macadamia nuts is a nice alternative to pecan pie.

1 9-inch single pie crust
1/2 cup butter
1/2 cup firmly packed brown sugar
1/2 teaspoon vanilla extract
1 pinch salt
3/4 cup light corn syrup
3 large eggs, beaten
2/3 cup macadamia nuts, coarsely chopped


Preheat oven to 400°F (204°F).

Prepare single pie crust according to recipe directions, using a 9-inch pie plate; do not bake.

In a large bowl, combine butter, brown sugar, vanilla and salt until well blended. Slowly stir in corn syrup and eggs. Mix well. Fold in nuts; pour into unbaked pie crust.

Bake for 10 minutes. Reduce heat to 350°F (177°C). Bake an additional 35 to 45 minutes or until center is set and firm. Cool to room temperature and serve with whipped cream or ice cream, if desired.
