Ambrosia Pecan Pie

Orange peel and coconut combine with pecans to make this truly special and rich-tasting dessert. It always wins compliments at Christmas dinner.

3 large eggs
3/4 cup light corn syrup
1/2 cup granulated (white) sugar
3 tablespoons brown sugar
3 tablespoons orange juice
2 tablespoons butter or margarine, melted
1 teaspoon grated orange peel
1/8 teaspoon salt
1 1/2 cups chopped pecans
2/3 cup flaked coconut
1 (9 inch) unbaked pie shell


Preheat oven to 350°F (177°F).

In a large mixing bowl, beat eggs, corn syrup, sugars, orange juice, butter, orange peel and salt until well blended. Stir in pecans and coconut. Pour into pastry shell.

Bake for 50 to 60 minutes or until a knife inserted near the center comes out clean. If edges become too brown, cover with foil. Cool on a cooling rack.
