Java Brownie Icing
For coffee lovers. You'll love the flavor combination of chocolate and coffee in this icing, especially good over Java Brownies.
Enough to cover a 9-inch pan of brownies
1/2 cup whipping cream
1 to 2 teaspoons pure instant coffee
1 cup semi-sweet chocolate morsels
2/3 cup confectioners' (powdered) sugar, sifted
1/8 cup unsweetened baking cocoa powder, (optional)
In a small, heavy-duty saucepan, combine cream and coffee granules over low heat, stirring constantly until dissolved. Add morsels. Stir until smooth. Remove from heat. Stir in powdered sugar. Stir vigorously until smooth. Chill until spreading consistency. Spread over cooled brownies. Sprinkle with cocoa. Cut brownies into squares.
