Coffee Icing

Delicious icing made with powdered sugar, butter, brewed coffee and vanilla. Great on Chocolate Mocha Cake.

Yield

1 1/3 cups

Ingredients

2 cups confectioners’ (powdered) sugar
1/4 cup butter or stick margarine, room temperature
3 tablespoons strong brewed coffee
1 teaspoon vanilla extract

Directions

Beat together confectioners’ sugar, butter, coffee, and vanilla until smooth. Add more liquid or confectioners’ sugar as needed to reach desired consistency.
