Grape Lemon Sherbet

This is a very light and very refreshing fruity dessert. Especially good on a hot summer day.

1 pint lemon sherbet
1 1/2 cups grape juice
1/2 cups grape preserves
2 tablespoons grated lemon rind


Let sherbet soften slightly in refrigerator. Place sherbet in an electric blender with grape juice, preserves and lemon rind. Blend on low speed until thoroughly mixed. Do not let sherbet melt completely. Place mixture in ice cube tray without partitions and freeze until firm.
