Raspberry Strawberry Buckle

Batter Ingredients

1/2 cup butter, room temperature
1/2 cup granulated (white) sugar
1 large egg
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup nonfat plain yogurt
1 pint fresh strawberries
1 pint fresh raspberries

Topping Ingredients

1/2 cup granulated (white) sugar
1/2 cup all-purpose flour
3/4 teaspoon ground cinnamon
1/2 cup butter or margarine


Preheat oven to 375°F (191°C). Grease one 11 x 7-inch glass baking dish.

In a large mixing bowl, cream butter and sugar until light and fluffy; beat in egg. Add in the baking powder and salt. Stir in flour, one cup at a time alternating with the yogurt. Spread batter into the prepared pan. Arrange fruit over top of batter. Sprinkle topping over fruit.

For topping: Mix together sugar, flour, butter, and cinnamon until the mixture resembles coarse crumbs.

Bake for 1 hour and 15 minutes or until the top is puffed and nicely browned. Allow to cool on wire cooling rack. Serve directly from the baking dish or for a more attractive presentation, cut into squares and arrange on a platter.
