Apple Crumble

This New Zealand inspired crumble is made with tart apples seasoned with ginger and cinnamon topped off with a cinnamon-ginger almond crumb topping. It's great served with vanilla ice cream or fresh whipped cream.

Filling Ingredients

8 sheets phyllo dough (14 inches x 9 inches)
butter-flavored cooking spray
1/2 cup dark brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
4 medium tart apples, peeled and sliced

Topping Ingredients

1/2 cup all-purpose flour
1/2 cup dark brown sugar
1/2 cup soft whole wheat bread crumbs
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/2 cup cold butter or margarine
1/4 cup slivered almonds


Preheat oven to 350°C (177°C). Grease an 8-inch square baking dish.

Cut phyllo sheets in half; spritz with butter-flavored spray. Layer phyllo, sprayed side up, in the prepared baking dish.

In a large bowl, combine the brown sugar, flour, ginger and cinnamon; add apples and toss to coat. Spoon over phyllo dough.

In another large bowl, combine the flour, brown sugar, bread crumbs, ginger and cinnamon; cut in butter until mixture resembles coarse crumbs. Add almonds; sprinkle over apple mixture.

Bake for 40 to 45 minutes or until filling is bubbly and topping is golden. Cool for 10 minutes before serving.
