Pumpkin Spice Bars

These cookies are perfect for the holidays. Made with all good things -- spice cake mix, cream cheese, sweetened condensed milk, pumpkin and pecans. Delicious!

5 dozen bars

Ingredients

1 (18.25 ounce) package spice cake mix
1 large egg
2 tablespoons butter or margarine, melted
1 (8 ounce) package cream cheese, room temperature
1 (14 ounce) can sweetened condensed milk
1 (16 ounce) can pumpkin
2 large eggs
1/2 teaspoon salt
1 cup chopped pecans

Directions

Preheat the oven to 350°F (177°C).

In a large bowl, combine cake mix, 1 egg, and melted butter; stir until mixture is well blended (mixture will be dry). Press into bottoms of three 8 x 5 x 1-inch aluminum foil pans or one 15 1/2 x 10 1/2-inch jellyroll pan. In another large bowl, beat cream cheese until fluffy. Add sweetened condensed milk, pumpkin, 2 eggs, and salt; beat until mixture is smooth. Pour over crust. Sprinkle pecans over filling.

Bake 30 to 35 minutes or until filling is set. Cool in pans on a wire cooling rack 20 minutes; chill. Cut into 1 1/2-inch bars.

Storage

Store in an airtight container in refrigerator.
