Raspberry Delights

These attractive bars have a rich buttery crust holding the sweet jam topping. They're a big favorite on Christmas cookie trays.

Yield

3 dozen cookies

Ingredients

1 cup butter, room temperature
1 cup granulated (white) sugar
2 egg yolks
2 cups all-purpose flour
1 cup coarsely ground pecans
1 cup raspberry jam

Directions

Preheat the oven to 350°F (177°C). Lightly grease a 13 x 9-inch baking pan with Pan Release or baking spray with flour.

In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks. Gradually add flour and mix well. Stir in the pecans.

Spread half into prepared baking pan. Top with jam. Drop remaining dough by teaspoonfuls over jam.

Bake for 25 to 30 minutes or until top is golden brown. Cool on a wire cooling rack. Cut into bars.
