Frosted Pumpkin Bars

Nicely spiced bars, perfect for the health-conscious.

1 cup all-purpose flour
1 cup granulated (white) sugar
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cloves
1 large egg
2 egg whites
1 cup canned pumpkin
1/4 cup canola oil
2 tablespoons water
4 ounces reduced fat cream cheese
1 1/2 cups confectioners' (powdered) sugar
1 teaspoon vanilla extract
1/4 teaspoon grated lemon peel


Preheat the oven to 350°F (177°C). Lightly grease a 11 x 7 x 2-inch baking pan.

In a mixing bowl, combine the first six dry ingredients. Add egg, egg whites, pumpkin, oil and water; mix well. Transfer to the prepared baking pan.

Bake for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Cool on a cooling rack.

In a mixing bowl, beat cream cheese. Beat in powdered sugar, then vanilla and lemon peel. Frost bars. Chill for 15 minutes, then cut.


Refrigerate leftovers.
