Gum Paste

Gum paste is used for making flowers that dry hard. Especially for those used on wedding and special occasion cakes. They can be made in advance and stored until needed.

Ingredients

1 heaping tablespoon glucose
3 tablespoons warm water
1 tablespoon Gum-tex™ or tragacanth gum
1 pound sifted confectioners' (powdered) sugar (approximately 4 cups)

Directions

Heat glucose and water until warm. Mix Gum-tex with 1 cup of the sugar and add to glucose mixture. Mix well. Gradually knead in enough sugar until you have used about 3/4 pound.

Gum paste handles better when aged, store in a plastic bag at least overnight, then break off a piece and work in more sugar until pliable but not sticky.

Storage

Gum Paste decorations will last indefinitely. Gum Paste can be stored for several months in a plastic bag inside an airtight container.
