Cooking Spray
Using cooking spray is a great way to cut the fat in cooking, but have you thought of making your own? Here is how.
Ingredients
plastic spray bottle, preferably one with a mist setting as well as spray
cooking oil (vegetable oil, canola oil, or olive oil)
liquid lecithin
Directions
Combine equal parts cooking oil and liquid lecithin-a natural emulsifier available at most health food stores and some drugstores-in a clean spray or pump bottle. Place a label on the bottle.
Shake the bottle well before use.
Additional Information
When baking cakes, coffeecakes or muffins (any bake good that expands within a pan), it is best to use Pan Release to grease the pan. Pan release will prevent anything from sticking in the pan and you will not need to use a knife along the edge of the pan to dislodge the food before turning out the baked good.
Storage
Store in pantry.
