Fudge Mint Torte

This delicious torte features a homemade chocolate fudge cake with a Creme de Menthe filling.

Cake Ingredients

1 (12 ounce) package semi-sweet chocolate pieces
1 cup (2 sticks) butter or margarine
1 1/2 cups firmly packed light brown sugar
4 large eggs
1 1/2 cups sifted all-purpose flour

Filling Ingredients

2 cups heavy cream
1/4 to 1/3 cup green Creme de Menthe
2 tablespoons confectioners’ (powdered) sugar

Directions

Preheat oven to 375°F (191°C). Grease three 9 x 1 1/2-inch round cake pans with Pan Release or cooking spray.

Combine chocolate pieces and butter in small saucepan. Place over very low heat just until melted. Remove from heat. Transfer chocolate mixture to large bowl. Beat in sugar. Beat in eggs one at a time. Beat in flour until well blended. Pour into prepared pans, dividing evenly.

Bake for 15 to 20 minutes or until tops spring back when lightly touched with fingertip. Cool cakes in pans on cooling racks for 10 minutes. Invert; cool completely.

Make filling: Whip heavy cream, Creme de Menthe and powdered sugar until stiff.

To assemble: Stack and fill layers with filling, using 1/3 between each layer and over the top. Garnish with chocolate shavings.
