Mint Cupcakes

Ingredients
3 cups sifted cake flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter or margarine
1 3/4 cups granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1/4-1/2 teaspoon mint extract, as desired
1 1/4 cups milk
Directions
Preheat oven to 350°F (177°C). Prepare the muffin pan by placing baking cups in each cavity or by brushing the cavities with Pan Release or cooking spray.
Sift together flour, baking powder and salt. Set aside. Cream butter and sugar together until light and fluffy. Add eggs, vanilla and mint extracts to butter mixture. Add flour mixture alternately with milk, beating well after each addition. Continue beating one minute. Spoon batter into baking cups.
Bake 20 to 25 minutes or until toothpick inserted comes out clean. Cool 10 minutes in pan on rack; remove and cool completely before icing.
