Funnel Cake Mix

The popular county-fair favorite is a breeze to prepare with this mix. A funnel "hat" on the gift bag will come in handy for the cook!


about 1 1/2 cups mix


1 1/4 cups all-purpose flour
2 tablespoons nonfat dry milk powder
1 tablespoon granulated (white) sugar
1 teaspoon baking powder
1/8 teaspoon salt


In a medium bowl, combine flour, dry milk, sugar, baking powder, and salt. Store in an airtight container in a cool place. Give with serving instructions.

To serve: Heat about 1/2 inch vegetable oil in a large skillet over medium heat. In a medium bowl, combine mix, 1 cup lemon-lime soft drink, and 1 egg; beat until well blended. Cover end of funnel with finger. Hold funnel over skillet and pour about 1/2 cup batter into funnel. Remove finger from funnel and, beginning in center of skillet, release batter in a circular motion toward outside of skillet. Using 2 spatulas to turn, fry funnel cake about 1 minute on each side or until golden brown. Drain cake on paper towels. Sprinkle with confectioners' sugar. Repeat with remaining batter. Serve warm. Yield: about 7 funnel cakes
