Mississippi Mud Cake

Cake Ingredients

1 package chocolate cake mix
1/4 cup vegetable oil
1 1/4 cup water
2 large eggs
1 package instant chocolate pudding
1 cup chopped nuts
1 cup miniature marshmallows

Mississippi Mud Icing Ingredients

1 stick butter or margarine
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/2 cup evaporated milk or whole milk
1 pound (4 cups) confectioners' (powdered) sugar
1 cup chopped nuts

Directions

Preheat oven to 350°F (177°C). Grease a 13 x 9-inch baking pan with Pan Release or baking spray with flour.

In a bowl, add cake mix, oil, water, eggs and pudding. Mix on low speed for 30 seconds. Scrape bowl. Mix on medium speed for 2 minutes. Stir in nuts. Pour the batter immediately into the prepared baking pan.

Bake for 35 to 45 minutes or until done (cake is completely away from the sides of the pan or until a toothpick inserted in the center of the cake comes out clean). Remove cake from oven and immediately sprinkle with marshmallows. Return to oven for 1 to 2 minutes, or until marshmallows start to puff. Remove from oven.

Make the icing: In a sauce pan, melt butter. Add cocoa, vanilla, milk and sugar. Beat until smooth. Pour over warm cake. Spread evenly over cake. The cake will get "muddied" by the spreading action. Sprinkle with nuts. Place on a wire cooling rack to cool.
