Mint Chocolate Cake
Delicious! The combination of mint and chocolate is always a sure-fire pleaser.

Ingredients
1 (18.25 ounce) package chocolate cake mix
Icing Ingredients
1/2 cup butter or margarine, room temperature
2 cups confectioners (powdered) sugar
1 tablespoon water
1/2 teaspoon peppermint extract
3 drops green food coloring
Topping Ingredients
1 1/2 cups milk chocolate chips
6 tablespoons butter or margarine, room temperature
1/4 teaspoon peppermint extract
Directions
Preheat oven to 350°F (177°C). Lightly grease a 15" x 10" x 1" baking pan with Pan Release or cooking spray.
Prepare cake batter according to package directions. Pour into prepared pan. Bake for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Cool on a cooling rack.
In a bowl, combine the icing ingredients until smooth. Spread over cooled cake.
For topping, in a microwave-safe bowl, melt chocolate chips and butter; stir in extract. Spread over icing. Refrigerate until set.
