Orange Blueberry Pancakes

10 pancakes
Ingredients
1 cup whole wheat pancake mix
1 1/4 cups orange juice, divided
1 large egg
1 tablespoon canola oil
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup fresh or frozen blueberries
1/2 cup syrup
Directions
In a bowl combine 1 cup orange juice, egg, and oil, mix well. Add pancake mix, cinnamon, and nutmeg, and mix to blend thoroughly. Let batter rest 5 minutes.
Meanwhile, preheat griddle or non-stick skillet and spray with non-stick cooking spray. Prepare syrup (below).
Just before making pancakes stir blueberries into batter. Cook pancakes over medium heat (2 tablespoons batter each) until golden on both sides (approximately 2 minutes per side).
Combine syrup and remaining 1/4 cup orange juice and heat just until boil. Serve hot pancakes with warm syrup.
