Homemade Pancakes

Buttermilk makes these homemade pancakes light and fluffy. Serve for breakfast or brunch and top with real butter, pure maple syrup, or jams and preserves.

Ingredients

2 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup shortening or butter
1 large egg, beaten
2 1/2 cups buttermilk

Directions

Preheat griddle over medium heat. In a mixing bowl, combine flour, baking powder, salt, and baking soda. Cut in shortening or butter. Add the beaten egg and fresh buttermilk and mix until smooth.

Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
