Chocolate Chip Pancakes III

An easy pancake recipe made with buttermilk, eggs, butter, and chocolate chips. Serve these pancakes for breakfast or brunch with maple or strawberry syrup and top with fresh whipped cream.

4 to 6 servings

Ingredients

2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
2 cups fresh buttermilk
2 large eggs, beaten
2 tablespoons melted butter
6 ounces semi-sweet chocolate chips (about 1 cup)

Directions

In a large mixing bowl, sift together the flour, baking powder, and baking soda. Add buttermilk; mix until combined. Add beaten eggs and butter; mix well. Stir in chocolate chips.

Pour small amounts (about 1/4 cup) into a preheated frying pan or a pancake griddle. Flip pancakes when soft bubbles form on the surface. Continue to cook until lightly golden brown.

Serve with maple syrup or fruit syrups and fresh, sweetened whipped cream.
