Holiday Pumpkin Bread

A very moist holiday bread that makes enough for you and gift giving as well.


three 7 x 3-inch loaves (26 servings)


3 cups granulated (white) sugar
4 eggs
2/3 cup water
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground allspice
3 1/2 cups all-purpose flour
2 teaspoons salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 (15 ounce) can pumpkin puree
1 cup chopped walnuts
1 cup raisins
1 cup vegetable oil


Preheat oven to 350°F (177°C). Grease three 7 x 3-inch loaf pans with Pan Release or cooking spray.

Mix oil, sugar, and eggs together in a large bowl. Mix in pumpkin puree and water. Stir together flour, soda, baking powder, salt, and spices. Add to the pumpkin mixture, and mix until just combined. Stir in nuts and raisins. Divide batter into prepared pans.

Bake for 1 hour until bread tests done. Cool on wire cooling racks.
