Delicious Pumpkin Bread

This pumpkin bread is delicious! The steps are simple and the result is good, moist and smells wonderful. You can use canned or fresh pumpkin. One half cup raisins may be substituted for the nuts.


three 7 x 3 inch loaves (24 servings)


3 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground nutmeg
2 cups solid pack pumpkin puree
1 cup vegetable oil
1/2 cup chopped walnuts (optional)
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
3 cups granulated (white) sugar
2/3 cup water
4 large eggs


Preheat oven to 350°F (177°C). Grease two 9 x 5-inch or three 7 x 3-inch loaf pans with Pan Release or cooking spray.

Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, salad oil, eggs, and nuts. Beat until well combined. Pour batter into prepared pans.

Bake for approximately 1 hour or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to cooling racks.
