Carrot Banana Bread

Carrots add a special touch to this delicious banana bread.

1/3 cup vegetable or canola oil
1 cup granulated (white) sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup mashed ripe bananas
1 cup grated carrots
1/2 cup chopped pecans


Preheat oven to 350°F (177°C). Grease a 9 x 5 x 3-inch loaf pan with Pan Release or cooking spray.

In a mixing bowl, combine oil and sugar. Add eggs; mix well. In a separate bowl, combine the flour, baking soda, salt and cinnamon; gradually add to the creamed mixture alternately with bananas. Stir in carrots and pecans. Transfer to the prepared loaf pan.

Bake in preheated oven for 55 to 65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire cooling rack to cool completely.
