Poppy Seed Bread II

This sweet quick bread needs only the unique taste of crunchy little poppy seeds to make you smile.


two 9 x 5-inch loaves (24 servings)


1 teaspoon salt
1/4 cup poppy seeds
3 cups all-purpose flour
4 large eggs
1 1/2 cups vegetable oil
2 cups granulated (white) sugar
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup milk


Preheat oven to 325°F (163°C). Grease two 9 x 5-inch loaf pans with cooking spray.

Mix the flour, salt, sugar, and soda in a mixing bowl. Add vanilla, milk, eggs, and oil. Beat for five minutes with an electric mixer. Stir in the poppy seeds. Pour batter into loaf pans.

Bake in the preheated oven for one hour. Cool on wire cooling racks.
