Walnut Date Quick Bread

The dates make wonderful little pockets of sweetness in this quick bread.

1 cup chopped dates
1 cup boiling water
3 tablespoons butter, softened
1 cup dark brown sugar
1 large egg
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped walnuts


Preheat oven to 350°F (177°C). Grease an 8 x 4-inch loaf pan with cooking spray.

In a small bowl, combine the dates and water; let stand for 15 minutes (do not drain). In a bowl, cream butter and brown sugar; add egg and mix well. Combine flour, baking soda and salt; add to the creamed mixture alternately with dates and liquid. Stir in walnuts. Pour into the prepared loaf pan.

Bake for 60 to 65 minutes or until a toothpick inserted near the center comes out clean. Cool on a cooling rack.
