Cherry Pecan Bread

Full of sweet cherries and nuts, the taste and appearance of this golden loaf make it ideal for autumn gatherings.

1/2 cup butter, softened
3/4 cup granulated (white) sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 cup chopped pecans
1 (10 ounce) jar maraschino cherries, drained and chopped
1 teaspoon vanilla extract


Preheat oven to 350°F (177°C). Grease a 8 x 4-inch loaf pan with Pan Release, baking spray with flour, or shortening dusted with flour.

In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour,

baking soda and salt; add to the creamed mixture alternately with buttermilk. Stir in pecans, cherries and vanilla. Pour into prepared loaf pan.

Bake for 65 to 75 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire cooling rack.
