Blueberry Orange Bread

This a very simple recipe to make and very flavorful. Everyone will love it! You may use thawed frozen blueberries if fresh ones are unavailable.


one 9 x 5 inch loaf (12 servings)


2 1/4 cups all-purpose flour
3/4 cup packed brown sugar
1 tablespoon baking powder
1 teaspoon salt
1/4 cup butter or margarine, room temperature
2 large eggs
2 tablespoons orange zest
1/2 cup milk
1/2 cup orange juice
1 cup fresh blueberries


Preheat oven to 350°F (177°C). Lightly grease a 9 x 5-inch loaf pan with cooking spray.

In a large bowl combine the flour, brown sugar, baking powder, salt, butter, egg, orange zest, milk and orange juice. Beat at low speed just until moistened. Then beat at medium speed for 2 minutes. Fold in the blueberries and spread into the prepared pan.

Bake for 60 to 70 minutes or until a toothpick poked into the center of the loaf comes out clean. Cool in pan for 10 minutes then invert onto a wire cooling rack to cool completely before serving.
