Blueberry Banana Bread

Tasty bread! Very moist and not too sweet.


2 - 8 x 4 inch loaves (32 servings)


1 3/4 cups all-purpose flour
1 1/2 cups granulated (white) sugar
1 teaspoon baking soda
1 teaspoon salt
2 large eggs
1 cup mashed ripe bananas
1/2 cup vegetable oil
1/3 cup water
1 cup fresh or frozen unsweetened blueberries*
1/2 cup chopped walnuts


Preheat oven to 350°F (177°C). Grease two 8 x 4 x 2-inch loaf pans with cooking spray.

In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil and water. Stir into the dry ingredients just until moistened. Fold in blueberries and walnuts. Pour into prepared loaf pans.

Bake for 55 to 65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to cooling racks.

Additional Information

* If using frozen blueberries, do not thaw before adding to batter.
