Banana Bread
This is a big banana-nut loaf with a big banana taste. Baking powder gives extra leavening.

Ingredients
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2/3 cup granulated (white) sugar
1/3 cup butter or margarine, room temperature
2 large eggs
1 cup mashed banana
1/2 cup chopped walnuts
Directions
Preheat oven to 350°F (177°C). Grease an 8 x 4-inch loaf pan with Pan Release or cooking spray.
In a large mixing bowl, sift together flour, baking powder, baking soda, salt, and sugar. Add butter, eggs, nuts, and mashed banana. Beat until well blended. Pour batter into prepared pan.
Bake about 55 to 60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
