Quick Lemon Poppy Seed Bread

This extra-quick bread is perfect for those days when you do not have extra time for baking. You and your family will love the ease of preparation and the delicious flavor.


two 9 x 5-inch loaf pans (24 servings)


1 (18.25 ounce) package white cake mix
1 (3.4 ounce) package instant lemon pudding mix
4 eggs
1 cup warm water
1/2 cup vegetable oil
4 teaspoons poppy seeds


Preheat oven to 350°F (177°C). Grease two 9 x 5-inch loaf pans with cooking spray.

In a mixing bowl, combine the cake and pudding mixes, eggs, water and oil; beat until well mixed. Fold in poppy seeds. Pour into prepared loaf pans.

Bake for 35 to 40 minutes or until bread tests done. Cool in pans for 10 minutes before removing to a wire cooling rack.
