Mocha Nut Bread II

This rich, dark-colored loaf features the unbeatable combination of coffee and chocolate. Family and friends can't eat just one slice.


1 loaf (16 servings)


2 cups all-purpose flour
1 cup granulated (white) sugar
1/3 cup baking cocoa
2 tablespoons instant coffee granules
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 1/4 cups sour cream
1/3 cup butter, melted
1 1/2 (10 ounce) cups semi-sweet chocolate chips
1/2 cup chopped pecans


Preheat oven to 350°F (177°C). Grease a 9 x 5-inch loaf pan with cooking spray.

In a large bowl, combine the flour, sugar, cocoa, coffee granules, baking soda and salt. In another bowl, beat eggs, sour cream and butter until smooth. Stir into dry ingredients just until moistened. Fold in chocolate chips and pecans. Pour into prepared loaf pan.

Bake for 55 to 60 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire cooling rack.
