Chocolate Nut Bread

You can't go wrong with this delicious chocolaty bread recipe. It tastes as yummy as it looks! It is a wonder special-occasion bread...and it never lasts long at bake sales.

Ingredients

1 cup butter or margarine, room temperature
2 cups granulated (white) sugar
5 large eggs
2 (1 ounce) squares unsweetened chocolate, melted
1 teaspoon vanilla extract
2 1/2 cups cake flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 cup chopped walnuts

Directions

Preheat oven to 350°F (177°C). Grease four 5 x 3 x 2-inch loaf pans with cooking spray.

In a mixing bowl, cream butter and sugar. Add eggs, chocolate and vanilla; mix well. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in nuts if desired. Pour into prepared loaf pans.

Bake for 35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pans to cooling racks to cool completely.
