Cheesy Roasted Red Pepper Bread

Heated in the oven or on the grill, this easy 'n cheesy bread will be a year-round favorite.


12 slices


1 (1 pound) loaf French bread
1 cup shredded mozzarella cheese (4 ounces)
1/2 cup mayonnaise or salad dressing
1/4 cup finely chopped roasted red bell peppers, (from 7-ounce jar), well drained
1 tablespoon chopped fresh cilantro, if desired
1/2 teaspoon ground cumin
1 small onion, finely chopped (1/4 cup)


Preheat oven to 400°F (204°C). Cut bread loaf horizontally into 3 layers. Mix remaining ingredients.

Spread half of the cheese mixture over bottom layer. Top with second layer; spread with remaining cheese mixture. Top with third layer; press firmly. Wrap securely in heavy-duty aluminum foil.

Bake 15 to 20 minutes or until hot.
