Eggnog II

Sugar and milk are beaten into egg yolks over heat and then chilled before adding rum and whipped cream in this recipe for the traditional holiday beverage.

5 to 6 servings

4 egg yolks
1/4 cup white sugar
1 pinch salt
2 cups milk
1 teaspoon vanilla extract
2 tablespoons rum
1/2 cup heavy whipping cream
1 pinch ground nutmeg

In the top of a double boiler, whisk together the egg yolks, sugar and salt. Add milk and vanilla; mix well. Stir frequently and cook over hot water until mixture thickens to coat a metal spoon. Mix in rum and chill.

Beat whipping cream until stiff peaks form. Fold into chilled egg mixture, pour into glasses and top with freshly grated nutmeg.
